I was once under the impression that Cinco de Mayo was the 4th of July of Mexico and this is coming from a gal who grew up dancing at little "step-kick-hop-step-kick-hop-step-clap-clap" on the playgrounds of Los Angeles. Turns out, the real day that Mexico gained their independence from Spain is on el 16 de septiembre. So feliz día de independencia!
I love whenever I get a chance to cook some Mexican food and introduce people to what I ate every day for 18 months when I lived in Texas. I definitely don't cook it as well as the hermanas who so lovingly opened their home to me but it's still pretty tasty.
Here are the flautas I made for my family. They're pretty easy to make. Shred some chicken and mix it with cooked onions and garlic. Then, put the mixture inside a corn tortilla, roll it up, and secure it with a toothpick. Then fry it until it's golden brown and crispy.
Flautas must be served with some chopped lettuce, tomatoes, crema mexicana, spicy green hot sauce, and guacamole (which, Bonus Points! Today is Guacamole Day!)
